8 Makanan "Sehat" Ini Bisa Menjebak

Gencarnya promosi, iklan dan informasi yang tidak akurat mungkin menjadi salah satu faktor penyebab yang membuat Anda terjerumus dan salah memilih makanan sehat.
Untuk membantu membedakan mana makanan yang bisa dijadikan teman atau musuh, berikut penjabaran dua ahli diet yaitu Lauren Antonucci dan Lisa Moskovitz, yang juga ahli gizi olahraga di New York City.  Dua pakar ini akan membuka kedok beberapa makanan jahat yang bersembunyi di balik label "sehat".

1. Protein Bar


"Protein bar pada dasarnya adalah vitamin dan protein yang dimasukkan dalam sepotong permen. Mereka tampak seperti pengganti makanan ringan yang sehat, tetapi makanan ini sebenarnya bisa berisi lebih dari dua kali jumlah lemak dan karbohidrat dari brownies cokelat," kata Moskovitz

Untuk menghindari asupan kalori yang berlebihan, Anda dapat memilih protein bar dengan kandungan kalori kurang dari 180 kalori dan 5 gram lemak, serta menyediakan setidaknya 5 gram serat.

2. Buah kering

Antonucci merekomendasikan untuk memilih buah-buahan segar atau beku ketimbang menyantap buah kering.  Buah-buahan segar atau beku akan memberi sensasi lebih kenyang pada perut karena mengandung cairan yang lebih banyak.

"Dengan makan buah-buahan segar Anda akan bisa makan dalam porsi lebih banyak dengan jumlah kalori yang lebih sedikit dan merasa kenyang akibat cairan yang terkandung pada buah," kata Antonucci.

3. Margarin
Mentega dan margarin memiliki bentuk yang nyaris sama. Keduanya pun bersaing ketat dan banyak dari Anda yang berpikir bahwa margarin yang terbuat dari lemak tumbuhan lebih menyehatkan bagi tubuh dibanding mentega yang terbuat dari lemak hewani. Tetapi menurut para ahli dari Mayo Clinic, persaingan keduanya dimenangkan oleh produk mana yang lebih alami.

Meskipun margarin dan mentega memiliki nilai kalori yang tak jauh berbeda, tetapi margarin yang dijual di pasaran mungkin mengandung zat tambahan sehingga kandungan lemak transnya lebih tinggi, yang pada gilirannya akan meningkatkan kadar kolestrol buruk (LDL) dan menurunkan kadar kolesterol baik (HDL). 

"Lemak trans adalah salah satu unsur dalam makanan yang kami rekomendasikan untuk harus dihindari sepenuhnya," kata Moskovitz.

Sementara itu, mentega terbuat dari krim dan mengandung lemak jenuh yang tinggi. Tapi sisi baiknya, mentega relatif lebih alami karena tidak menggunakan bahan kimia atau manipulasi yang tidak perlu. Untuk menekan risiko sakit jantung, Moskovitz menyarankan memilih whipped butter atau mentega asli yang sudah dikocok untuk memasukkan udara ke dalamnya. Mentega kocok lebih sedikit kalori dan lemaknya daripada mentega biasa, berkat udara tersebut.

4. Yogurt

Yogurt adalah produk susu yang merupakan sumber penting kalsium dan vitamin D. Namun waspadalah dalam memilih yogurt. Beberapa jenis yogurt ditawarkan di pasaran ada yang memiliki kandungan lemak dan gula yang sangat tinggi.  Moskovitz menganjurkan untuk memilih yogurt plain atau tanpa rasa karena  menawarkan protein dua kali lebih banyak dan rendah karbohidrat.  Jadi, biasakan membaca label atau kandungan informasi gizi pada kemasan yogurt sebelum memutuskan untuk membelinya.
5. Selai kacang rendah lemak
Ketika para produsen mengurangi kandungan unsur lemak dari selai kacang, mereka menggantinya dengan gula. Akibatnya, selai kacang rendah lemak ini memiliki nilai kalori total yang sama seperti aslinya, tetapi memiliki jumlah karbohidrat dua kali lebih banyak.

"Lebih baik memilih selai kacang biasa. Anda akan makan lebih sedikit, karena versi penuh lemak lebih memuaskan dan mengenyangkan," kata Moskovitz.

6. Bran Muffin
Bran muffin adalah makanan yang biasa menjadi teman minum kopi di pagi hari. Bahan dasarnya terbuat dari adonan roti yang diberi ragi dengan sebagian besar kalori yang berasal dari gula dan tepung halus. Satu potong muffin bisa mengandung hingga lebih dari 400 kalori dan kandungan lemaknya bisa sampai 15 gram. Bila Anda kadung menyukai muffin sebagai camilan, Antonucci menyarankan untuk membuat muffin sendiri di rumah dengan porsi yang terkontrol serta kandungan gula dan lemaknya yang rendah.

7. Burger


Banyak orang berpikir bahwa memesan burger kalkun, bukan daging sapi, akan membuat mereka tetap langsing. Jangan tertipu. Burger berisi kalkun memiliki lebih dari 600 kalori dan 30 gram lemak - dan itu tanpa roti atau topping. "Anda tidak perlu khawatir untuk memilih jenis daging pada burger. Anda hanya perlu membatasi ukuran porsi Anda," ucap Moskovitz.

8. Sushi


Gulungan sushi juga bisa menipu. Meski terlihat tampak kecil, tetapi jumlah kalori yang terkandung di dalamnya cukup besar dan bisa menjadi bom waktu bagi ukuran pinggang Anda. Omega 3 Supplements! Why Do We All Need Them? Check This Article Out!

Have you been hearing a lot lately about Omega Supplements? I know I have been hearing a lot. They were recommended to my pregnant wife by her doctor. After that she started to harp on me about taking these supplements. Initially I was confused. I read a little bit, but I still was not too sure about them. So I asked my Doctor, and this is what he told me.

Omega 3 fatty acids have come into main stream lately for a lot of reasons. They are part of a group called Essential Fatty Acids. They are essential for certain functions of the body, unfortunately the body doesn't manufacture omega Fatty Acids through your everyday diet. With insufficient levels, there are many things that can go wrong with your health. Complicating matters is the unfortunate reality that these Fatty Acids are really difficult to source in the modern every day diet. Fish, walnuts, hempseeds, krill and algae are real good sources. Do you eat these daily?
Beef can be a pretty good source as long as the beef cow was grass fed, which is exceedingly rare and expensive today, when it is readily available. Another problem is the prevalence of fish farming, where Omega 3 quality is questionable due to the feed the fish are given, which quite often does not reflect their natural diet. Because of the importance of Omega 3 Fatty Acid and their lack of presence in our daily diets, Omega 3 supplementation is a terrific strategy for getting the right amounts of these healthy fats.

The positive effect of Omega 3s in cardiovascular health is very well documented. Omegas help by lowering cholesterol and high blood pressure, thinning the blood and helping to keep anti-arrhythmic.

DHA, commonly found in Omega 3 Supplements, is quite often recommended to help women have healthier pregnancy. Paleo Diet Foods Lists

The Paleo diet is based on the ancient dietary habits of our ancestors in the Stone Age era. They did not have access to all of the food sources that we have today and this diet encourages us to stick with the same basic food groups they had. These are meat, seafood, fruit, vegetables, nuts and seeds. These will form the basis of the Paleo diet and it will allow you to create delicious, healthy meals for yourself and your whole family.

Meat products will be abundant in this diet; and although you can choose from a variety of sources, try to avoid the fatty cuts such as chicken wings, bacon and pork sausages. Eggs can be eaten, but try to limit this to no more than 6 per week. These were available to the cavemen in those times, but it was a scarce food source so you should eat these accordingly. A healthy and popular meal is an omelette; which can be made with veggies such as mushrooms, onions and tomatoes. It is a great breakfast option and it is also a high protein meal. When you choose other meat products, make sure that they are from lean sources; preferably from grass or pasture fed animals.

There are of course certain food groups that one should avoid altogether while on the Paleo diet. These are dairy products, grains, processed foods and fatty meats. Since these were not available in the Paleolithic era, we should not consume these at all. Grains to avoid include pasta, barley, rice cakes and oatmeal. Even if the label says “wheat free” you should still avoid it. Pasta, rice, cakes and pudding are also on the avoid list. Dairy products like milk, cheese, yoghurt, ice cream and butter cannot be eaten and should not be used in any meal. As a basic rule of thumb, if our ancestors did not eat it, we should not either!

Although it might seem that Paleo Food lists are a bit restricted, there are still a lot of delicious meals to enjoy. Fruit and vegetables make up a large part of your daily meal plan and you can easily add a variety of these to any meal. You can also snack on fresh fruit throughout the day. As for veggies, you can pretty much eat anything – except the starchy ones like potatoes. You can grab a handful of nuts or seeds during the day or in-between meals to help keep hunger at bay. You can also add them to salads and desserts too.

The Paleo diet also increases your metabolism over time; allowing you to lose additional weight. Research has shown that this diet can help you lose up to 15 pounds in 6 months. It will stabilize your blood sugar, reduce hunger and improve your digestive system as well. You will get all the benefits of living a healthy life while on the Paleo diet; and it is suitable for the whole family too.

Olive Leaf Extract Dosage – 6 Key Elements To Keep In Mind

So, you've heard about olive leaf extract and the benefits to be gained from taking it, and you think that it sounds like it might do you a great deal of good…but you have a few questions before giving it a go.

What's the best way to take it? What's the recommended dosage? How much? How often? And, what's it going to cost you?
Well there are a couple of elements to keep in mind - in fact, there are six of them - that will help you decide on the best dose for you, or whoever you plan to give it to.

#1 Are you human or animal? Just kidding…although olive leaf extract can be given to pets. (There will soon be more information about this on my website)

#1 Child Or Adult This is fairly basic. All of the olive leaf products that I've seen, including the sprays, recommend giving half the adult dose to children. You will need to consult your healthcare professional before giving any of the extract to children under 2 years.

#2 What Product Do You Want To Use - Capsules, Liquids, Powder, Tea Or Sprays? The type of product that you choose will depend on what you want to use it for, and what is most convenient for you and your budget. Some products are developed for specific problems, like the sinus, throat and vaginal sprays. The others are all ingested, so they will affect the whole body.

Different olive leaf products vary in: ease of consumption, strength, and time it takes for them to enter the blood stream. Your choice of product will, in part, determine the olive leaf extract dosage, so always follow the guidelines on the packaging.

But to give you a rough idea:
Nasal spray: 1 to 3 sprays in each nostril, every 2 to 4 hours
Throat spray:: 2 to 3 sprays, 1 to 4 times a day, or more for some brands.
Liquid extract: 1 to 3 times a day with a total adult dose of 15ml (1/2 fluid ounce) per day.
Capsules: dose varies enormously from 1 per day to 8 or more.
Tea: 1 to 5 cups a day, with varied brewing times to affect the strength and taste.
Tinctures: 1 to 3 drops a day.
Powder: 1 to 2 tablespoons per day, mixed with food or drink.

#3 The Quality Of The Product That You Want To Use? Individual brands and different olive leaf products vary in the amount of active ingredients that they contain. Many of them will list a percentage of oleuropein, which is considered to be the main healing ingredient in olive leaves, although it's only one of many. A higher amount of this phytochemical does not necessarily mean that a product is superior to one with a lower value. The level of oleuropein can be artificially boosted by adding powdered product. This might seem to be a good thing, but it does mean that the chemical mix is out of balance compared with the source, i.e the fresh leaf.

Fresh-leaf products are best in that they will contain the maximum amount of the leaf's healing chemicals, but they may not be the most convenient for you or the most appropriate.

Such factors as: when the leaves are picked; the length of time between picking and processing the leaves; how the leaves are processed; the drying methods used; how long the product sits around before it is packaged; and shelf storage time, will all impact on the final quality. There are also factors such as the growing conditions for the trees - namely the quality of the air, soil and water; and what fertilisers or sprays are used.

And there is, of course, the starting point…the tree itself. Not all cultivars have leaves of medicinal quality, and not all olive leaf products come from the best quality leaves.

#4 Why Are You Taking Olive Leaf Extract? In other words, how sick are you and what results are you looking for? Are you already in good health and you want to stay that way; or do you have a chronic health condition? Are you seriously ill or have you caught the latest cold that's doing the rounds? You will probably need a stronger dose for a severe illness than for a mild infection. Likewise, a health condition that you have had for a long time is likely to need a higher dose than an acute one.

It may be helpful to think in terms of three dosage levels.
A low or minimum dose is usually all that's required to maintain good health and to give your immune system a boost. This level is safe to continue for months or years.
A medium dose will serve for short-term treatment of a cold, flu or mild infection; or for a chronic condition.
A high dose is recommended for short-term treatment of acute, severe illness and for chronic conditions that don't respond to the lower dose.

You may wish to consult your healthcare professional regarding what your maximum dose should be. If you are unsure, or have never had olive leaf products before, always start low and gradually increase the level.

#5 Your Personal Biochemistry – How You React To Olive Leaf Extract. Everyone is different, so the same dose cannot affect everyone in the same way. It depends on your individual biology; your weight; your height; your general health; what toxins you've been exposed to; and the state of your immune system.

There are no reported negative side effects from taking olive leaf extract; nor is there an established toxicity level. However some people experience symptoms from the detoxification process.

This is referred to as the "die-off " or Herxheimer Reaction, and it happens when the olive leaf extract kills harmful microbes in the body, releasing their toxic contents into the blood stream. The more "bugs" you have, the more likely you are to experience the detox symptoms. They usually last from 3 to 7 days and may include diarrhea, headache and joint or muscle aches. These symptoms may be mild but if they trouble you a lot, you can reduce your dose for a day or two, or even stop for 1 or 2 days.

Of course, if you are at all concerned, visit your healthcare professional immediately.

#6 Prescription Drugs And Other Considerations. Check with your doctor first if you are on any prescription drugs. This is particularly important if you are on medication for blood pressure, blood sugar, cholesterol, or to thin your blood. This is because olive leaf extract can lower your blood sugar, your cholesterol and your blood pressure; and it can reduce the clumping of platelets, thereby thinning the blood.

Pregnant or breast feeding ladies should NOT take olive leaf extract unless you have checked with your healthcare professional first, as there is some question as to whether the extract would affect the baby's immune system development.

The cost of olive leaf extract may be a factor in determining which quality and type of product you are able to take. In the long run, though, poor quality products are a waste of money, because they are unlikely to help you. That's not to say that cost directly equates with quality.

In summary, you can see that the correct olive leaf extract dosage is a very individual thing, dependent on personal as well as product factors. It is impossible to state a specific dose that would suit everyone, but I hope that this information has helped you to make some wise choices for yourself.

Self-assembling proteins offer golden food future

There is a big future for exploiting protein’s natural tendency to self-assembly into micelles or nanotubes, says a leading researcher in the field.



“Self-assembling of proteins is common. In fact, it’s more of a rule than an exception. If we can manipulate this self-assembling of proteins at the nanoscale, I see a big future for it,” said Professor Kees de Kruif from NIZO Food Research.
The majority of research in this area to date has focussed on dairy proteins, with the potential of casein micelles and alpha-lactalbumin nanotubes being explored, Prof de Kruif told FoodNavigator following his presentation to attendees at the Nanoscience conference at IFT Annual Meeting and Food Expo in New Orleans.
The protein casein makes up about 80 per cent of the protein content of cow’s milk (30-35 about 2.5 gram per litre grams per litre) and is found naturally in the form of spherical micelles with diameters ranging from 50 to 300 nanometres. The stability of these micelles during processing also makes them a very attractive nano-encapsulator.
Indeed, according to Prof de Kruif, Mother Nature designed the casein micelles to concentrate, stabilise and deliver nutrients to the newborn.
In nature, calcium phosphate is bound inside the micelles, but food scientist can replace calcium with other minerals or vitamins, thereby providing a delivery system for certain bioactive molecules.
“Caseins are very beautiful proteins, with functionalities in food unsurpassed by other food proteins,” said Prof. de Kruif. Indeed, they are very stable to heat, and the stability can be increased by cross-linking with transglutanimase (TGase).
Nanotubes
Another dairy protein receiving interest from researchers is bovine alpha-lactalbumin.
By adding an enzyme to the protein, Prof de Kruif and his team were able to produce food-grade nanotubes.
“This was the first time that anyone made man-made nanotubes from proteins,” he said.
In addition, for food scientists, the tubular structures are more interesting than the spherical ones, he said.
Moreover, by taking the science further, and manipulating this self-assembly process, new proteins with new functionalities can be produced, said Prof de Kruif. “They could replace the use of gelatine.”
These nanotubes could also be used for encapsulation of ingredients, he said. Moreover, the nanotubes would not need to sealed and could be left open-ended. And how far away are we from using such nanotubes in food?
“This is still a bit far fetched in the sense that you can make the nanotubes and you can stabilise them, but they are too expensive for the food business at present,” he said.
“We need investment to scale this up.”
Beyond dairy
Since the self-assembling of proteins into intriguing structures is common to all proteins, Prof de Kruif says that, in principle, non-dairy proteins could be used.
“In theory, you need a long stiff molecule, like gelatine,” he said. “We should look at elongated structures because they’re the interesting ones, not the globular proteins.”
Study with plant proteins is still in its infancy, but the study performed with milk proteins should be translated to other proteins.
Prof de Kruif looks at the issue from a material science rather than food science point of view and focuses on understanding what properties the protein should have. “It’s the same as a chemical engineer asking what properties a plastic should have before they start developing it.”
Nanoboom
The application of nanotechnology and nanoparticles in food are emerging rapidly, and some analysts predict that nanotechnology will be incorporated into 16.4bn worth of food products by 2010.
However, enthusiasm over the rate of progress and the possibilities is being tempered by concerns over possible downsides of the science.
